Sephardic cooking really combines the best of Spanish and Middle Eastern cuisine - it blends sweet with savory and spicy, and is mostly vegetable or grain based. Think of tagine and lovely things like that - lots of dried fruits, nuts, legumes... it's wonderful!
I grew up on saffron, cumin, and cinnamon. I feel pretty lucky for my dad's cooking :)
Now my MOM's cooking on the other hand, is a whole other story. She's more of a Shake N'Bake sort of gal.
I'm definitely going to have to check out Kan Zaman sometime soon. I've only been to Marmara in Marlboro, and it was not good at all. A cute little storefront in Freehold called Ibby's Falafel just opened recently - have you been there??

Sephardic flavors! Please elaborate! I've done Lebanese (Kan Zaman, Long Branch - bummed I missed the hooka on the dessert menu!!!) Had an Egyptian friend, Mervat, who loved to cook for me. Please tell me more about Sephardic flavors!
Hi Elise! I'm jealous that you live so close to Nicholas! I think for your first time there, you should really get the full tasting menu---with it you get a sample of their desserts, all of which are fabulous (especially the creme brulee!) I'd suggest the soft-shell crab if you like crab, and the pulled pork, the duck, and the beef are delicious entrees. I imagine the foie gras with strawberry and balsamic is also great, though I've never tried it.
Yeah, definitely tasting menu---especially since they make a big deal over it and treat it so fancily; it makes for a very fun dinner date.
Sorry, I've been exploring everything on this site, and didn't realize that I had received a bunch of comments. I opened a new place in Bayville at 439 Rt. 9, in the Berkeley Plaza at Friendlys Grill. Full menu, bar service and lots of seats. Cya Ben

never got to visit two if by sea... basil t's is great, and since they take opentable reservations now i'm sure we'll be visiting it more often.
Welcome to Jersey Biters. I grew up in Red Bank. Actually, my uncle is Jack from Jack's music. I worked in the old location which is now Ashes from the time I was 12 to 22. Still haven't made it to Red though. We hit Basil T's a lot and used to love Two if By Sea but they've gone out of business . :(

Happily married foodie living in Monmouth County, working in NYC. In my dreams, I own a restaurant specializing in my father's food - Sephardic flavors being dished out in a comfortable, but still sexy atmosphere. It's doable, with a TON of money and a good space. Red, in Red Bank (duh). Not too exciting, but the food and service are consistently wonderful.
