OK, it's that wonderful time of year when our gardens are bursting with fresh produce, but, what to do with so much jumbo zucchini? I grill it, stir fry it, but was wondering if anyone had something really cool or different to do with it. I'll start with one that is very refreshing:
Grilled zucchini rolls
Cut you zucchini into very thin strips, lengthwise
lightly grill and set aside
take fresh ricotta (pasturized will do if you cannot find fresh) stir in lemon zest, some minced fresh herbs(I like flat parsley and a bit of basil) salt and pepper to taste
Take a strip of grilled zucchini and place a dollop of ricotta mixture on end and roll it up, serve chilled with lemon zest on top, touch of evoo. Nice light app!
